Job Summary

We are seeking a dedicated and skilled Assistant Kitchen Manager/Line Cook to join our dynamic culinary team. This position combines elements of kitchen management and hands-on cooking responsibilities. The Assistant Kitchen Manager/Line Cook will collaborate closely with the Kitchen Manager to ensure smooth kitchen operations, maintain food quality standards, and supervise the kitchen staff. The ideal candidate should possess excellent culinary skills, strong leadership abilities, and a passion for delivering exceptional dining experiences.

Responsibilities

1. Culinary Excellence
• Prepare and cook a variety of dishes according to established recipes and quality standards.
• Ensure all food items are cooked and presented properly, adhering to portion control guidelines.
• Assist in developing and refining menu items to meet customer preferences and dietary restrictions.
• Monitor food inventory levels, order supplies, and maintain proper storage procedures.
2. Kitchen Management
• Work closely with the Kitchen Manager to oversee day-to-day kitchen operations, ensuring efficiency and productivity.
• Train and supervise kitchen staff, providing guidance, feedback, and performance evaluations.
• Maintain a clean, organized, and sanitary kitchen environment, complying with health and safety regulations.
• Assist in scheduling kitchen staff to ensure adequate coverage while managing labor costs effectively.
• Collaborate with the Kitchen Manager to develop and implement standard operating procedures and kitchen policies.
3. Quality Assurance
• Conduct regular inspections of food preparation areas to ensure compliance with sanitation and hygiene standards.
• Monitor cooking techniques, taste, and presentation to uphold high-quality standards.
• Address customer complaints or concerns regarding food quality promptly and professionally.
• Collaborate with the Kitchen Manager to maintain accurate records of food production, waste, and inventory.
4. Team Collaboration
• Foster a positive and collaborative work environment, promoting teamwork and effective communication among kitchen staff.
• Assist in coordinating and executing special events, catering orders, and private dining experiences.
• Collaborate with other departments, such as front-of-house staff, to ensure a seamless dining experience for guests.
• Participate in staff meetings, training sessions, and professional development opportunities.

Requirements

• High school diploma or equivalent; culinary or hospitality degree is a plus.
• Proven experience as a line cook or similar role in a fast-paced kitchen environment.
• Solid understanding of food preparation techniques, kitchen equipment, and safety regulations.
• Strong leadership and interpersonal skills, with the ability to motivate and develop a team.
• Excellent organizational and time management abilities.
• Ability to thrive under pressure and meet tight deadlines.
• Flexibility to work evenings, weekends, and holidays as required.
• Knowledge of food cost controls and inventory management.
• Current food handler's certification or willingness to obtain one.
